The olive oil is made with olives from different trees mainly Moraiolo and Frantoiani, the olives are harvested by hand in November, when they are not too mature, this is to facilitate the production of an oil rich in nutrients and vitamins, the grinding done with a little olive oil yield has an immature minor, but product quality is much higher.
The pressing of the olives are cold, as in the past, not to change the quality of the oil without an oil filter to get more and more respectful of the very nature of the product.
